Buffalo chicken with blue chips |
My favorite version of the buffalo chicken salad is a salad topped with deep fried battered chicken fingers that's been smothered in butter and hot sauce with mounds of crumbled blue cheese and dressing. Something that looks similar to the pictured salad below...

Since I am posting caloric values here, I decided against my preferred version and go with a less caloric laden version.
If you read my previous post, Willow Tree chicken prepared chicken salads are on sale this week at Market Basket for $4.99 and I picked up the 15 oz container of the"Buffalo Style" chicken salad.
With it being Friday, I assembled my salad base with whatever leftover veggies I had in the work fridge. Cucumber complements the dip pretty well. I used Boston Bibb lettuce leftover from yesterday's loc lac salad, some grape tomato, red onions, chopped romaine, cauliflower, shredded carrots and red cabbage. For a little texture and flavor boost. I added 1 oz of crumbled Danish blue cheese. FULL FAT.
Optional: Drizzle some hot sauce for an extra kick. For this salad, I prefer the original Cholula Hot Sauce because it's not too tangy, not too salty or not too spicy.
TADA! Now you have a delicious salad!
You can also bring it up a notch and add some Fritos corn chips or Tostitos chips to give it some extra crunch. It's almost like eating buffalo chicken dip with chips during a Superbowl game.
Now let's see what we come up with calories wise... DRUM ROLL PLEASE
With the Tostitos Blue Corn Chips, it came in LESS THAN 550 CALORIES!
I do warn you, its gonna be high in sodium! (Wendy's spicy chicken salad is close to 800!)
