I had some Joseph's Flatbread left from last week and didn't want it to go to waste so I made a grilled chicken salad wrap for lunch today. Hot lunches are always preferred to
cold lunches, (in my book anyway)
When I prepped my meals for the week on Sunday, I pan seared 20 oz of chicken breast, (yes I actually portioned it out). The chicken was marinated overnight using a bottled Cajun marinade.
I warmed the precooked chicken on the electronic grill to give it a bit of a crisp. Also, I find that microwaved chicken sometimes have a "rubbery" texture.
After a few minutes on the grill, I remove the chicken and add the flatbread to the grill along with the chicken and I used roasted red peppers.
It only takes about a minute or two to toast the flatbread. I skipped the cheese to keep the calories down but you can definitely add cheese.
Once removed, I added fresh romaine, Caesar dressing (the Balsamic was for my tall friend, Jill) and rolled it up into a wrap.
Delicious and satisfying!
